Why is it important that freshly squeezed juices are stored in vacuum?

The issue arises when you need to store these juices because they oxidize very quickly in the open (in a mere 20 minutes) and lose most of their precious ingredients. It’s important to store them in impermeable containers as soon after preparing them as possible and prevent the decaying of their nutrients, which are their purpose. The downside of store-bought juices is precise that we don’t know how they were prepared and stored. If they were exposed to air for a longer period of time before packing, most vitamins and minerals have already oxidized. The same is true of retail packaging (plastic and glass bottles), which, aside from juice, also contains some air (the empty space under the cap).
